Kashitate Shuzo

Founded in 1925 on Hachijojima, an island south of Tokyo, Kashitate Shuzo produces Shima no Hana, an authentic barley shochu made with barley koji and sweet potato yeast, distilled under atmospheric pressure in copper pot stills. It is distinguished by the structure of barley, the fruity elegance of sweet potato yeast, and a subtle acidity developed during fermentation. This one-of-a-kind island spirit has been passed down through generations, representing the unique evolution of shochu culture that crossed the sea from Kyushu and took root on Hachijojima.
