Founded in 1887, Zuisen is the brewery located closest to Shuri Castle. Dedicated to the art of aging, the distillery specializes in kusu (aged awamori), carefully maturing its spirits to develop exceptional depth and character. In recent years, we have also introduced ZUISEN LEGARE, a fragrant sparkling passion fruit liqueur made with an awamori base. In addition, Zuisen successfully revived a pre-war strain of black koji (Zuisen-kin) preserved at the University of Tokyo, unlocking its distinctive character and flavor. This achievement led to the creation of the one-of-a-kind Ryukyu awamori Usaki, which is now produced and sold exclusively by the distillery.
