Located atop a small hill in the heart of Iki Island, Ikinokura Shuzo was founded in 1984 through the collaboration of six historic distilleries, carrying forward the island's rich shochu-making tradition. Our distillery is blessed with exceptionally pure water—so pristine that the area is also known as Shimizu ("pure water"). While preserving the tradition of atmospheric distillation, we continue to pursue innovation by using vacuum distillation to craft fruity, elegant shochu.
